Ingredients

For the Chicken Fritters

  • 1 1/2 lbs chicken breasts (about 3 large), finely chopped or ground
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or cornstarch/potato starch for gluten-free)
  • 4 oz mozzarella cheese (1 1/3 cups, shredded)
  • 1 1/2 Tbsp chopped fresh dill
  • 1/2 tsp salt (adjust to taste)
  • 1/8 tsp black pepper
  • 2 Tbsp extra light olive oil (or any high-heat cooking oil)

For the Garlic Aioli Dip (Optional)

  • 1/3 cup mayonnaise
  • 1 garlic clove, finely pressed
  • 1/2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Preparation Time

  • Prep time: 15 minutes
  • Cooking time: 20 minutes
  • Total time: 35 minutes

Instructions

Step 1: Prepare the Chicken Mixture

  1. Start by finely chopping or grinding the chicken breasts into small pieces. If you prefer a smoother texture, you can use a food processor.
  2. In a large mixing bowl, combine the chopped chicken, eggs, mayonnaise, and shredded mozzarella cheese.
  3. Add the all-purpose flour (or gluten-free alternative), chopped fresh dill, salt, and black pepper. Mix thoroughly until all the ingredients are evenly incorporated. Cover and let the mixture rest for 5–10 minutes to allow the flavors to meld together.

Step 2: Cook the Fritters

  1. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
  2. Using a tablespoon or small ice cream scoop, spoon portions of the chicken mixture onto the skillet. Flatten them slightly with the back of the spoon to form patties.
  3. Cook the fritters for 3–4 minutes on each side, or until golden brown and cooked through. You may need to adjust the heat to prevent burning.
  4. Remove the cooked fritters and place them on a plate lined with paper towels to drain any excess oil. Repeat with the remaining mixture, adding more oil as needed.

Step 3: Prepare the Garlic Aioli Dip (Optional)

  1. In a small bowl, combine mayonnaise, pressed garlic, lemon juice, salt, and black pepper.
  2. Stir well until smooth and creamy. Taste and adjust the seasoning as needed.
  3. Cover and refrigerate the dip until ready to serve.

Serving Suggestions

Serve the chicken fritters warm with a side of garlic aioli dip for dipping. These fritters pair beautifully with a fresh salad, roasted vegetables, or even a bowl of rice for a complete meal. For an extra burst of flavor, garnish with a sprinkle of fresh dill or parsley.

Tips and Notes

  • Customization: You can add other herbs like parsley or chives to the chicken mixture for a different flavor profile.
  • Storage: Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to maintain crispiness.
  • Freezing: The uncooked chicken mixture can be frozen in a sealed container for up to 1 month. Thaw completely before cooking.
