Flatbread is one of the most versatile and beloved types of bread worldwide, known for its soft texture and rich flavor. Whether served with dips, wrapped around savory fillings, or enjoyed on its own, flatbread is a staple in many cuisines. This recipe uses simple ingredients and straightforward techniques to create light, airy flatbreads perfect for any meal. With minimal preparation time and a short cooking process, you’ll have warm, delicious flatbread in no time!

Preparation Time

  • Preparation Time: 15 minutes
  • Rising Time: 1 hour
  • Cooking Time: 15 minutes
  • Total Time: 1 hour 30 minutes
  • Servings: 6 flatbreads

Ingredients

  1. 300 milliliters (1 1/2 cups) of warm water
  2. 7 grams (1 teaspoon) of salt
  3. 1 teaspoon of sugar
  4. 7 grams (1 packet) of active dry yeast
  5. 2 tablespoons of olive oil (plus extra for greasing)
  6. 400 grams (3 cups) of all-purpose flour

Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine the warm water (about 40°C or 100°F) with the sugar and yeast. Stir gently and let it sit for 5–10 minutes until the mixture becomes foamy. This step ensures the yeast is active and will help your flatbread rise.

Step 2: Mix the Dough

Add the olive oil and salt to the yeast mixture. Gradually sift in the flour, mixing with a wooden spoon or your hands. Continue until a sticky dough forms. If necessary, add small amounts of flour to reduce stickiness, but avoid making the dough too dry.

Step 3: Knead the Dough

Transfer the dough to a lightly floured surface. Knead for 8–10 minutes until the dough becomes smooth and elastic. This process strengthens the gluten, ensuring your flatbread will have a soft and chewy texture.

Step 4: Let the Dough Rise

Lightly grease a clean bowl with olive oil. Place the dough inside, cover it with a damp kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 5: Divide and Shape the Dough

Punch down the risen dough to release any air bubbles. Divide the dough into 6 equal portions and roll each piece into a ball. Using a rolling pin, flatten each ball into a circle or oval about 1/4 inch thick. Keep the shapes rustic for an authentic look.

Step 6: Cook the Flatbreads

Heat a non-stick skillet or griddle over medium-high heat. Once hot, place a flatbread in the pan (no oil needed). Cook for 1–2 minutes, or until bubbles form and the bottom develops golden spots. Flip the flatbread and cook for another 1–2 minutes. Repeat for all flatbreads, stacking them on a plate covered with a clean towel to stay warm.

Congratulations! You’ve just made soft, fluffy flatbreads from scratch. This recipe is perfect for pairing with dips like hummus, serving alongside soups or curries, or using as a wrap for your favorite fillings. With a few simple ingredients and easy steps, homemade flatbread can elevate any meal. Store leftovers in an airtight container or freezer bag for up to three days, or freeze for longer storage. Reheat in a skillet for the best results.
