Ingredients
- 2 lbs boneless skinless chicken thighs or breasts, cut into chunks
- 4 medium potatoes, peeled and diced
- 3 large carrots, peeled and sliced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1 teaspoon salt (or to taste)
- 4 cups low-sodium chicken broth
- 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)
- Chopped fresh parsley, for garnish (optional)
Instructions
- Add the chicken, potatoes, carrots, celery, onion, and garlic to the slow cooker.
- Sprinkle in the thyme, rosemary, salt, and pepper. Pour in the chicken broth and gently stir.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until vegetables are tender and chicken is fully cooked.
- If you prefer a thicker stew, mix cornstarch and water in a small bowl and stir into the stew 30 minutes before serving. Cover and let it finish cooking.
- Garnish with fresh parsley before serving. Serve hot with bread or biscuits!
Storage
