Ingredients
- 1 lb ground beef
- 2 tbsp olive oil or butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups cauliflower florets
- 4 cups beef broth
- 1 cup heavy cream
- 1½ cups shredded cheddar cheese
- Salt and pepper, to taste
- 1 tsp paprika (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 3 minutes.
- Add garlic and cook for another 30 seconds.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Add cauliflower florets, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until cauliflower is tender.
- Stir in heavy cream and cheddar cheese. Mix until cheese is melted and soup is creamy.
- Taste and adjust seasoning as needed. Serve hot.
Tips
- You can use frozen cauliflower — just add a few extra minutes to the simmering time.
- For a thicker soup, blend a portion of the cooked cauliflower and return it to the pot.
- Top with extra cheese, chopped bacon, or green onions for more flavor.
