Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil or butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups cauliflower florets
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tsp paprika (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft, about 3 minutes.
  2. Add garlic and cook for another 30 seconds.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Add cauliflower florets, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until cauliflower is tender.
  5. Stir in heavy cream and cheddar cheese. Mix until cheese is melted and soup is creamy.
  6. Taste and adjust seasoning as needed. Serve hot.
