  • 3 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 cups fresh green beans, trimmed

  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary

Method

  4. Place the chicken breasts in the baking dish and brush them generously with the garlic herb mixture.
  5. Arrange the potatoes around the chicken. Toss them with some of the remaining garlic herb mixture until evenly coated.
  6. Bake for about 20 minutes, then carefully remove the dish from the oven and add the green beans around the chicken and potatoes.
  7. Return the dish to the oven and continue baking for another 20–25 minutes, or until the potatoes are tender and the chicken is completely cooked through. The thickest part of the chicken should reach 165°F (74°C).
  8. For extra color, broil the dish for 2–3 minutes at the end of cooking, watching carefully to prevent burning.
  9. Allow the chicken to rest for about 5 minutes before slicing. Sprinkle with fresh parsley and spoon some of the flavorful pan juices over the chicken and vegetables before serving.
