Easy Creamy Potato Soup

This easy creamy potato soup is warm, comforting, and perfect for a simple
family meal. Tender potatoes and onions are simmered in a creamy, savory
broth for a delicious homemade soup with very little preparation.

Ingredients

  • 4 large potatoes, peeled and diced
  • Water, enough to cover the potatoes
  • 1 cup diced onion
  • 2 cups milk
  • 3 chicken bouillon cubes
  • 2 tablespoons all-purpose flour
  • 2 tablespoons dried parsley
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

Method

  1. Place the diced potatoes and onion in a large pot. Pour in just enough
    water to cover the potatoes.
  2. Bring to a boil, then reduce the heat and simmer for 12–15 minutes, or
    until the potatoes are tender.
  3. In a separate bowl, whisk the flour into the milk until completely
    smooth and free of lumps.
  4. Add the chicken bouillon cubes, dried parsley, and garlic powder to the
    pot. Stir until the bouillon dissolves.
  5. Slowly pour in the milk mixture while stirring continuously.
  6. Cook over low heat for another 5–8 minutes, stirring frequently, until
    the soup becomes creamy and slightly thickened.
  7. Taste and season with salt and freshly ground black pepper as needed.
  8. Serve the potato soup hot. Add shredded cheddar cheese, crispy bacon,
    or fresh parsley on top if desired.

Serving Suggestions

Serve with warm crusty bread, dinner rolls, or crackers. For an even
creamier texture, lightly mash some of the cooked potatoes directly in
the pot before serving.

Storage

Store leftover soup in an airtight container in the refrigerator for up
to 3 days. Reheat gently on the stovetop, adding a splash of milk if the
soup becomes too thick.
