Total Time: 30 minutes
Yield: 6 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 5 cups fresh tomatoes, chopped
  • 4 cups vegetable broth
  • ¾ cup orzo pasta
  • 2 cups fresh spinach
  • ½ teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Sauté the Aromatics
Heat the olive oil in a large soup pot over medium heat. Add the diced onion and cook for 4–5 minutes until softened. Stir in the garlic and cook for another 30 seconds.
  2. Cook the Tomatoes
Add the chopped tomatoes and cook for about 5 minutes, stirring occasionally until they begin to soften.
  3. Add the Broth
Pour in the vegetable broth and season with oregano, salt, and black pepper. Bring the soup to a gentle boil.
  4. Cook the Orzo
Stir in the orzo pasta and simmer for 8–10 minutes, stirring occasionally until tender.
  5. Add the Spinach
Stir in the fresh spinach and cook for 1–2 minutes until wilted.
  6. Finish the Soup
Remove from the heat and stir in the fresh parsley and lemon juice if using.
  7. Serve
Ladle the soup into bowls and top each serving with crumbled feta cheese and additional parsley.

Helpful Tips

  • Use ripe garden tomatoes for the freshest flavor.
  • Add extra broth if the orzo absorbs too much liquid.
  • For extra protein, stir in cooked shredded chicken or white beans.
  • Fresh lemon juice brightens the soup just before serving.

Serving Suggestions

Serve with warm crusty bread, garlic bread, grilled chicken, or a fresh Greek salad for a complete Mediterranean-inspired meal.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently over medium heat, adding a splash of broth if needed since the orzo will continue absorbing liquid.
