Syrup:

  • 1/4 cup water
  • 2 tablespoons sugar
  • 2 tablespoons dark rum

Cake:

  • 1 1/2 teaspoons vanilla extract
  • 3/4 teaspoon instant coffee powder
  • 2/3 cup cake flour
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 3 large eggs, separated
  • 3/4 cup sugar
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions:

Step 1: Preparing the Cake

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together the cake flour, cocoa powder, baking soda, instant coffee powder, and salt. Set aside.
  3. In a separate bowl, beat the egg yolks with 1/4 cup of sugar until light and fluffy. Add the vanilla extract, mixing well.
