For the Cake Batter:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 1/4 cup (60ml) pineapple juice

 

Instructions

Step 1: Prepare the Topping

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan thoroughly.
  3. Pour the melted butter into the pan and spread it evenly across the bottom.
  4. Sprinkle the brown sugar over the butter.
  5. Arrange the pineapple slices neatly on top of the brown sugar mixture. You can overlap them slightly for a more decorative look.

Step 2: Prepare the Cake Batter

  1. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy (about 2-3 minutes).
