Ingredients
- 1 lb ground pork (or chicken/turkey)
- 1 tablespoon sesame oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups green cabbage, thinly sliced
- 1 cup shredded carrots
- 4 cups chicken broth (low sodium)
- 2 tablespoons soy sauce or coconut aminos
- Salt & pepper to taste
- Green onions & sesame seeds for garnish (optional)
Instructions
- In a large soup pot, heat sesame oil over medium heat. Add ground pork and cook until browned, breaking it apart as it cooks.
- Stir in onion, garlic, and ginger. Cook for 2–3 minutes until fragrant.
- Add cabbage and carrots. Stir and cook for 4–5 minutes until slightly wilted.
- Pour in chicken broth and soy sauce. Bring to a boil, then reduce heat and simmer for 10–12 minutes.
- Season with salt and pepper. Taste and adjust as needed.
- Serve hot, garnished with green onions and sesame seeds if desired.
